The return of Fernando Canales and Iván Álvarez Iturbe
This autumn, Fernando Canales returns to the Euskalduna Palace with Euskalduna by Etxanobe, a project full of emotion and promise. Sixteen years after opening his first restaurant in this iconic building, the Bilbao-born chef comes back alongside Iván Álvarez Iturbe, his right-hand man and long-time culinary partner.
Designed by Patricia Urquiola, the new venue occupies the fifth floor of the Palace, offering spectacular views of the city and a terrace open all year round. Its cuisine reflects the meeting of two generations united by a shared passion: to move people through flavour, honouring local produce and the essence of Basque recipes from a contemporary perspective.
With this project, Etxanobe strengthens its presence in Bilbao alongside Atelier and Despensa, consolidating Fernando and Iván as a key duo in the city’s gastronomic scene.
Euskalduna by Etxanobe offers three unique spaces:
El Comedor, elegant and serene, with twelve tables to enjoy without haste.
La Terraza, open to Bilbao’s sky —perfect for those seeking calm and great views.
The Show Cooking, an intimate experience for six guests, where the kitchen unfolds up close, surrounded by fire, aromas, and conversation.
More than just a meal —an experience that blends technique, emotion, and memory.
An exclusive evening! For groups of more than 15 people, they open their doors on the night of your choice.
