Bølge is not just another café
With this project, we wanted you to feel the warmth of what we call our home. We’ve moved away from the traditional bar counter and embraced an open, residential-style kitchen to bring you a level of closeness never before seen in a café.

Through this project, we aim to offer you a culinary experience where every ingredient and seasonal product is treated with the utmost care.
Homemade pastries, toast, sandwiches, and a wonderful selection of hot and cold drinks are the foundation of our menu.
Something as simple as having sourdough toast with butter and jam made by us that very morning is only possible at Bølge.
We stay away from ultra-processed foods and prepare everything fresh each day, right in front of our customers.
Specialty coffees must score over 80 points out of 100 on the scale set by the Quality Coffee Institute to qualify. Certified tasters known as Q Graders—a kind of coffee sommelier—perform blind tastings, evaluating grain quality, flavor, aroma, and other attributes.
The space that houses our project has long been known as the Bay Sala Gallery
The façade has remained unchanged since it opened in 1971, founded by Juan Bayón, son of the painter Bay-Sala. From its opening until its closure, the gallery was a cultural landmark in Bilbao, hosting regular exhibitions and serving as a meeting point for numerous artists.
The more-than-50-year-old façade features a dark stone finish and solid wood carpentry, adorned with sculptural decorative elements. The friezes are attributed to painter José Arrue and are believed to date back before the Spanish Civil War. At the center of the façade stands a sculpted figure with a heraldic character.
